Oh, this was my big lunch! I have no idea what you call it, the name was in Mexican. But, it was fish on a bed of rice topped with guacamole and shredded nacho chips. It tasted as good as it looks!! And, I ate the whole thing! I really won't need dinner tonight. 


I should really be writing food reviews for the local paper, don't you think? Paul is writing a Golf Column in the Peterborough Examiner... I wonder if he could get me in for the Food Column... hmmm. Dinner out every night. Taking pictures of food which I thoroughly enjoy. I can definitely afford to put on some weight. Sounds perfect.


You're probably wondering why I had such a special lunch? It's review time for my staff. I sit with them for about an hour to go over their review and then I take them out for lunch. It's a chance I get to chat with them one on one and personally, not work related. Today was Paul's (not the Paul I mentioned above) and he picked this Mexican restaurant called La Hacienda. I should take you there when you come to visit. Do you and Dad like Mexican? Liam wants to go this weekend. It's authentic Mexican food not that Taco Bell stuff. It was a gooood lunch. He's a great guy and had a great review so it was well deserved. I hit the harder reviews in a couple of weeks. You know who I'm talking about!! And, yes they still get a lunch out :)
Snow day! Liam was so happy that all the buses were cancelled today. Oddly, there was no snow, just lots of rain and crappy weather. And it was kind of warm. (I don't see anyone driving across the lake anymore.) The roads were bad this morning, worse than last night because the heavy wet snow kept pulling my car. But, the roads were clear driving home. Just an all round dreary day and thought I would come home early for a change. Jim is still at school and Liam is studying now for a math test tomorrow. He starts his March break next week. Not sure what his plans are. I didn't plan anything. Was hoping I could take some time off and maybe I might. I will play it by ear, I want to try to take time off when you come to visit. You know I always take that Monday before you leave so we can drop Liam off to school and then do breakfast at Maggies. 


My shoulder is feeling much better. I had Liam pull it a bit and I felt something move. Maybe it was dislocated. Then I slept on the other shoulder last night with some creative pillow propping. I slept just fine. Weird that it was hurting so much yesterday! Not sure what that is all about but I think I'm on the mend. 


I don't feel like making supper tonight. I had a big lunch. But, Liam is probably hungry.

So this is probably breaking all rules of Lent but after all those pancake meals yesterday, I really needed some protein. Bacon wrapped tenderloin with pasta and peas and pickled beets on the side. Liam loves pickled beets. The beef turned out perfectly medium rare. That in itself is rare as I can never time it right. I always over cook our steak and we love our steaks pink! Today I actually didn't even put the timer on I just gut checked it so I don't even know how long I left it in for. Delish. The pasta had an Alfredo sauce and I threw in some frozen peas for colour. That was a throw-together-as-I-go dish. Turned out well too. So, when you come to visit I can totally cook for you and Dad... I didn't know you felt that you had to cook for us. We just really love your cooking. My pics look good but it's always difficult to enjoy your own cooking. You're the best cook on Earth! All my stuff kind of tastes the same. 

It's confirmed we will be in town on the 19th and staying over at your place :) Don't worry about dinner just breakfast and then we will head over to Jim's parents for a quick visit too before hitting the road. It will be a whirl wind weekend! And then you guys come the following weekend, right? For a long weekend. I'm looking forward to that :)

So, Friday will you tell me this juicy gossip?? I better not be disappointed! I've been dying to know!

I got an email last night that made me sad. My riding coach is no longer teaching at my barn :( I'll be starting with a new instructor Shannon. I met her once before when I did the barrel racing games... didn't really connect with her. She was kind of rough and almost mean... so, I'm feeling a little apprehensive. I'm riding Beau this weekend but then Janice said Shannon will be getting me back on Chakote or Mickey after that. I'm so bummed out. But, I will give Shannon a chance. I have to admit what I liked about Amy is that she is very safe but she doesn't challenge me at all. So, perhaps I will learn more. 

That's it for now! That's a lot, right? Going to do some freelance work then going to bed early to rest my shoulder. Love you lots and miss you oodles! mwah! Send my love to daddio too! xox
Did you get bad weather today? It started off as a nice day and by about 3 o'clock it started to snow heavily. This was my drive home. I guess I shouldn't have been taking pics while driving especially since the roads weren't that good. But, you can see I wasn't diving too too fast. And, you and dad will be happy to know I'm giving up speeding for Lent :) It's so hard to drive the speed limit on these country roads... sigh. Did I tell you I got my driver's licence in the mail. My picture is horrible!! And, Liam got his renewed Health card. I'm still waiting for mine. I might need it soon tho. I woke up this morning with what feels like a dislocated shoulder. I was screaming in agony this morning and lost all range of motion in my right arm. I think I popped it back in and it's been sore all day. And yes, I'm totally avoiding going to see a doctor since I don't have one here it would mean a very long wait at the hospital. I'm not in that much pain to do that yet. We'll see if it's better tomorrow. I think supper is almost ready! I'll post that blog shortly!

Here's my apple compote recipe. It's no secret.


3 lbs apple. The apples I used I think was Gala. The recipe recommends granny smith, pink lady or rome beauty. Peel, core and cut into 1-inch chunks. I would half that size next time.
lemon juice
1 tbsp apple brandy or cognac (optional)
1/4 sugar
1/4 tsp ground cinnamon


Combine all the ingredients in a large pot, cover and cook over low heat for about 30 minutes or until apples are tender. Let cool completely and serve. Soooo easy and delicious!
I got my haircut yesterday. The salon I go to sells the cutest things. It's owned by a lesbian. Not a big deal to me because I went to art school and all - lol. But, for this small town that was how it was described to me. Of course, I automatically made an appointment and I've been going there ever since. And, I think I've influenced almost all of the girls at my office to go there now too. Paul goes there too not sure if it's because of me tho. It oozes retro-chic style. I bought my dress there for the BH5 party last year. She has since gotten rid of her clothing and shoe line :( but she still sells beauty products and they are so unique and fun. I never usually buy anything but I saw these on the counter and I couldn't resist! They are tweezers!! I bought you one, the girls one (I don't even know if they use tweezers! ha!) and myself one, cause you always complain that I need a new tweezer. Don't worry they weren't expensive!! And, I know you might have a good tweezer but you could put this one in your purse and not have to worry about bringing one when you travel. You're gonna love it! I think I might love it more than the bookmarker I bought the other day... how is that possible?


I didn't do anything special with my hair, just a trim. I'm still growing it long. I think she cut my bangs too short but they will probably be perfect for Paris! I just worry that with my short bangs I look like I'm 12!
