I forgot to post my dinner from last night. Liam had the shrimp thai dish and I had this. This is what happens your leftover roast beef. And tonight I'm making pumpkin soup with the rest. Yup. There were a lot of leftovers!! I'm home early tonight. My presentation for Friday was postponed so my schedule was freed up. Oh, I feel so much more like myself today! Maybe I'm not going through menopause after all. It was just stress. haha!

Your food pics always look so appetizing (maybe because they really are!). You did a good job on the leftover. Great cooks think alike ... we're having pumpkin soup tonight too ... did you use the frozen butternut squash chunks? I tried to use less like you and of course the soup is much thinner ... it was good, but it's still a little thick because I put alot of stuff in mine (beef, carrots, turnip, Jamaican yam, cabbage and dumplings).

The setting sounds very nice and maybe a little rustic. Btw, do you think you'll be invited to Angie's wedding (I think it's in December in Jamaica)? ... We don't expect to be invited.
The guy is coming tomorrow to fix (I hope) the microwave. The weather is still very unsettled (drizzle, wet snow, flurries) and it really isn't warm enough for me, but the snow has melted and all I can see is alot of work outside ... the roofing people left a mess eventho they did cleanup the bigger stuff.
You still haven't said if the horse delivered yet? I read some of Liz's comments about your riding video(she sounded kinda hard and abrasive)... is that her way of being supportive and encouraging?
Glad to hear that you're in a better mood and not so stressed ... you do push yourself hard. Just take things in stride and try to do it in moderation ... and take of yourself! Ok, have to do dishes now and then watch some TV.
